For us, roasting is equal parts craft and science. We work in small batches on our 7kg drum electric roaster, starting only with SCA 84+ beans, and we measure everything — roast colour, extraction, TDS — because precision is how we honour the farmers' work. But the numbers are never the point; the cup is. Our goal is always to let each origin speak for itself.
